What Santa Fe’s Grease Interceptor Rules Require

Santa Fe County’s sewer ordinance requires restaurants, cafeterias, institutional kitchens, and other food-preparation facilities connected to the county sanitary sewer system to install a grease interceptor. Having one installed isn’t enough on its own.

Grease traps must be cleaned before they reach 75% of their design capacity, not on a fixed calendar schedule. That means your actual cleaning interval depends on your kitchen’s volume and output. Operators must keep a log book documenting maintenance activities and evidence of proper grease disposal, and county personnel can conduct unannounced inspections at any time.

Discharge Limits & Compliance Requirements

The ordinance prohibits discharging wastewater containing substances that solidify or become viscous between 32°F and 150°F into the public sewer. Facilities with inadequate interceptors that connect to the public sewer or change ownership must upgrade the system before discharge can resume. The City of Santa Fe also maintains its own grease interceptor chapter within its municipal code, separate from the county ordinance.

    Our heat went out late Saturday night - We called Capitol Plumbing and the crew, two men, Xavier and Alex, were here early Sunday morning. The furnace was removed and by 6:00 pm the new furnace was up and working - The heat was on and the house warmed up quite fast.     Had them install a complete new system for heating water and and radiant heat system. Went to a tankless hot water system. They worked very efficiently and wasted no time installing the system. Workers were friendly and explained everything about the equipment and answered my questions since I was not familiar with the tankless hot water system and the radiant heat used in homes. They hauled away the old tank and boiler and a soft water system that was out dated. It took about two days but the water was only off for part of the first day and we had hot water that night for showering. Over all a very positive experience and I would highly recommend Capitol Plumbing & Heating of Santa Fe for all your plumbing needs.
